This paper presents the design and the numerical modelling of an ultra-wideband Extended Gap Ridged Slotted Horn (EGRSH) antenna for food inspection via microwave imaging. By integrating slots and a low-permittivity filler material, the antenna extends its operation range from 3 up to 11 GHz, while maintaining a compact size. The design is validated for detecting low-density contaminants like Polytetrafluoroethylene (PTFE), within oil-based foods packaged in glass containers. A dielectric contrast map, computed with the Truncated Singular Value Decomposition (TSVD) method under Born approximation, results in a successful estimation of the contaminant position.
