The Langhe-Roero and Monferrato are an internationally renowned location where, under the UNESCO World Heritage label, tourists can live a fully, 'authentic' experience in gastronomy, local culture, visual delight and accommodation. Drawing on the theory of 'Enrichissement' conceived by Luc Boltanski and Arnaud Esquerre, the contribution explores how 'authenticity' experienced today is carefully constructed through the revision of the past and the manipulation of the notion of 'scarcity' towards 'exclusivity' and 'exclusion'.
