The aim of the study is to identify the desorption process in time of saffron flowers parts and replicas of the flower itself, in order to provide a model to represent this process. Considering the effect of moisture content of Saffron flower on the efficiency of the mechanized separation of spice from stamen and tepal. Tests on saffron flowers and replicas allowed to identify an isothermal model of the desorption process, coherent with the harvesting condition.

Abstract
