Nowadays talking about food is becoming an increasing trend. There is also, however, at the same time an unbelievable paradox, a growing disconnection from the real concept of food, a gradual departure from our local food culture. We are forgetting the real meaning of food as something that for centuries has been nourishing and fostering our health, but also our economic and socio-cultural system, and therefore our territorial identity. it is important that we work toward a change in the cultural paradigm, so that information can become the first seed, and therefore the first bud for a path that takes us back to food that nourishes, represents and fosters us.
