The aim of research activity is focussed on the evaluation of microcantilever-based mass sensor performances for biodetection of toxic molecules in food. We investigated the possibility to detect human pathogen bacteria (Salmonella spp.), milk allergens, mycotoxins and carcinogenic anabolic agent in meat. The results in terms of sensitivity and selectivity were compared with traditional analysis protocol and commercially available detection kits.
